These granola bars are super quick and easy! The ingredient list and prep time are nice and short so, add them to your Sunday night meal prep list. They make for a great midday snack for energy to make healthy dinner choices or a quick breakfast.
Makes about 12 bars
Ingredients:
2 1/2 cups quick or rolled oats
1 cup raw pumpkin seeds
1/2 cup raisins or other dried fruit pieces
2/3 cup peanut or almond butter
1/2 cup agave nectar
1/8 teaspoon sea salt
Directions:
1. Mix together oats, pumpkin seeds, and dried fruit
2. In a separate bowl whisk together agave nectar, sea salt, and peanut butter*. Then, pour over granola, and mix well until everything is combined. If the product seems too dry just add more agave nectar.
3. Line a shallow 8 x 8 or 9 x 13 dish with foil and pour mixture over top. Press the mixture down to create flat surface and cover with a second layer of foil. Refrigerate for 4 hours and cut into bars to wrap individually.
Store in refrigerator until you’re ready to eat. They should last about 2 weeks in refrigerator.
*If you have trouble mixing the peanut butter and agave you can warm it up stove top or in microwave. Depending on texture and thickness of the ingredient you choose it may be an unnecessary step.
